an update

Holy smokes life has gotten crazy lately. Where before my daily responsibilities included browsing the internet for work and making sure I wasn't wearing my pajamas all day, it now includes well nearly everything. ...or it might as well be because HOTDOG (read F-word) I am busy. B.U.S.Y. 

A few weeks ago I was offered a two week contract for the company I was working for right before I left for The Philippines. Two weeks have come and gone, and they've so graciously extended my contract to the end of May. (hoorayyyy!)  I'll be working everyday but Tuesday and going to school full time as well. Having been back at Uni for 2 days now, I can already tell it's going to be a crazy whirlwind. Full time work and full time school is no joke, but I'm so ready and excited for it.  I know that I'll have to really time manage, and work to make sure that I get everything done on time and well. 

In an odd way Macquarie parallels SF State so closely in the size of the campus, the crazy spirit of the mentors, (hello gatoraiders!) the look of the courtyard even down to the mall next door. If I'm not thinking about it, sometimes I forget that I'm not back at state. It's so bizarre  The only real difference I feel is how much older I am now. In class I'm referred to as a "mature age student." Even though this only means a student over 21, the term makes me feel so much older... which I guess I am. But hopefully with age comes wisdom and this time around, I definitely feel more prepared with the responsibilities of being a college kid. 

Still though, I could definitely use your good vibes as I embark on this new chapter of my life. I'm completely responsible for my school, my finances and my future. It's a scary and exciting time.

Valentines Leftovers







It feels like everyone's saying it this year, but this Valentine's Day was really my best one yet!  Unlike the last few years, Miguel & I had a super low key night in, partly because we wanted to save some money and partly because Miguel really wanted to cook me some steak. hah We both spent the day at work. (yup! we're both working again!) but caught the same train back home together.  He surprised me on the train with some gorgeous gerbera daisies. The man knows me well and remembered that I'm not a fan of roses. ;] Before we got home, we stopped by the bottle shop for some red wine to go with the steak Miguel was so excited to cook.  While he was cooking, I was putting the finishing touches on dessert and hanging up the heart garland I made a few days prior. Dinner was really beautiful and we spent the rest of the night talking and talking like we haven't done in a long while. 

It was such a good night and a sweet reminder how good the simple things can be.

A Resolution Update

So it's mid February now and a month & a half has passed since we all swore up and down that this year we would really, really I promise this time keep our New Years resolutions.  Well guys, today I'm here to check up on you. How are we doing so far? Have you kept them all? How about one? DO YOU EVEN REMEMBER THEM?! Just kidding guys, I'm not the resolution police, but I do want to keep you a little updated with mine.

After writing this post, I knew it was time to put my money where my mouth was and revise my eating strategy. Honestly it was more like my lack of eating strategy. Prior, the strategy was simple: EAT. I was happy to indulge myself and eat everything under the sun. I wanted to try the yummiest, creamiest, tastiest food all the time, I indulged in ALL my cravings and I snacked like no tomorrow. Mostly I did it with no remorse. Like I've said over and over again here, I'm a lover of food. I'm a carnivore at heart. But deep down, I knew something had to change.

Now I'm not sure if much would've changed had I been trucking along, cruising through life like I was earlier in 2012 with a full time job, no financial worries and no crazy future plans to go back to University. So in some strange way I thank the madness because the madness --those new life changes-- made me broke. Being short on cash forced me to get creative. This especially reigned true with food. We realized that going out for dinner and drinks multiple times a week and eating home cooked meals bulked up with meat, rice and vegetables (mostly out of season) was a way we could no longer live.

So I started to cut down. Goodbye steak & potatoes! Hello gorgeous summer chicken salad! Goodbye sausage rolls! Hello home made hummus dip! With the help of this blog, and research, I started eating properly. I only bought veggies that were in season, I minimized my meat intake, and I cut down portions.  Not only did these things help to save some serious moolah, but they also made me feel good. Along with some exercise, found on Youtube nonetheless, I've managed to drop enough weight for me to blog about it.

In the last month and a half I've lost 10 pounds. While this may not seem like much, it's significant to me. I've never really tried to lose weight before. So this, on my first real attempt, feels amazing.  Guys, I'm not kidding when I say if I can do it, you can do it. Don't forget about those resolutions you made when you were feeling so inspired and motivated for change not that long ago. I encourage you to pick up where you left off; I'm sure we can do this together.

Bondi Beach

A couple weeks ago, my sister & I took a middle of the week trip to Bondi.  While I whole heartedly believe that Sydney has much, much better beaches, Bondi is super easy to get to and we were craving some sun -- plus Carla had never been.  So off to the beach we went. Here's what we saw:

Grabbed a Burrito from The Original California Burrito Company before making it over to the water.  It was actually pretty good as far as burritos go, which is shocking because usually Mexican food here is terrible. 
Dead Blue Bottle Jellyfish. Those guys litter the ocean, but luckily I've never been stung.

I kinda loved how crowded the beaches were and seeing all the tourists enjoy Bondi for the first time (My sister included) It reminded me of the first time I went to Bondi, and how shocked I was that a beach so close to the city could have such crystal clear water. The beaches in SoCal sure don't look like that. 

It was such a nice little getaway that made me feel like I was really taking advantage of the few summer days we have left. I'm counting down the days til I go back to University, but I'm also trying my best to enjoy summer while it's here.

the best grilled cheese of my life.


Today I made the best grilled cheese I ever had in my life -- with typical fridge ingredients. So I thought I'd share because seriously it was the best. 

Ingredients: 
Wheat Bread
2 Slices of Tasty Cheese 
2 Sliced Brown Mushrooms
1 Slice of Sandwich Turkey Meat
1/4 tsp Pesto

Put it all together and heat on a medium heat pan. Don't take it off til the cheese gets all melty and delicious. Take a bite and thank me later. I mean, pesto on grilled cheese. Is this a thing or did I make it up? Either way, I'm so glad I did it. YUM.
